Courgette Pancakes

Here is a great little recipe that so easy to make its light and can be used at breakfast, lunch or dinner with vegetables, salad, a small helping of rice or potatoes.

Ingredients:

1 medium size courgette.

1 medium size spring onion.

1 large egg

Salt and pepper to taste.

2 tbsp coconut oil.

Method:

Grate courgettes into a small bowl.

Finely chop the onion in the courgette.

Break the egg into the bowl.

Add the salt and pepper to taste.

Heat oil in pan and scoop in 3 helpings of mix. Flatten and cook on both sides until golden brown.

Maybe a little scoop of Greek yogurt on top.
