Serves 3-4
Ingredients;
1- 1 ½ kg butternut pumpkin chopped in 3cm cubes
2 red onions chopped into wedges
1 tbsp olive oil
100g baby spinach
75g feta cheese
8 eggs
1/3 cup low fat mil
Method
- Heat oven to 230c
Line a roasting pan with baking paper. Place the pumpkin and onions on tray, sprinkle with oil and season. Toss to coat evenly.
Cook for 18-20 minutes. Remove an place spinach on top and allow to wilt. - Grease a baking dish and cover bottom and sides with baking paper. Throw in the veg and sprinkle feta on top.
- Whisk eggs, milk, salt and pepper in a jug. Pour over veg and cook for 35 minutes or until dish is golden brown.
