Ingredients
1 medium banana – mashed with a fork
1/3 cup of cooked quinoa
2 organic or free range eggs
1 tsp of ground cinnamon
½ tsp of natural vanilla essence (optional)
Coconut oil- for greasing the ramekins
Method
Preheat the oven to 180⁰C. Grease 2 ramekin dishes with coconut oil. Mix all ingredients together in a bowl and make sure the eggs are well mixed through. Divide mixture into 2 ramekin dishes and place on a baking tray, pour about ½ inch of water onto the bottom of the baking tray (picture below). Cook for 15 to 17 minutes.
Serve with 1 teaspoon of tahini or almond butter
