Quinoa Banana Bake

This makes such a delicious breakfast or afternoon snack option. It’s providing you with excellent protein source from the eggs and quinoa and simple carbohydrate from the banana. Cinnamon is excellent in helping regulate blood sugar, has anti viral and anti inflammatory properties.

Ingredients

1 medium banana – mashed with a fork

1/3 cup of cooked quinoa

2 organic or free range eggs

1 tsp of ground cinnamon

½ tsp of natural vanilla essence (optional)

Coconut oil- for greasing the ramekins

Method

Preheat the oven to 180⁰C. Grease 2 ramekin dishes with coconut oil. Mix all ingredients together in a bowl and make sure the eggs are well mixed through. Divide mixture into 2 ramekin dishes and place on a baking tray, pour about ½ inch of water onto the bottom of the baking tray (picture below). Cook for 15 to 17 minutes.

Serve with 1 teaspoon of tahini or almond butter
